It is a famous side dish for south indian recipes  like Idli, Rice and Dosai. Instead of Broad beans we can also use other vegetables but the same procedure. Without this there will be no south indian meals. It will be served in all marriages and functions in south india.

Ingredients

  • 100 grams legumes
  • 1/4 tablespoon turmeric powder
  • 1 tablespoon peanut oil
  • 3 tablespoons peanut oil
  • 1/4 kg small egg plant
  • 1 tbsp tomato
  • 1 tablespoon salt (as needed)
  • 1 gooseberry tamarind
  • 2 tablespoons sambar powder
  • 6 small onions / 1 large onion
  • 1 teaspoon mustard
  • 1 teaspoon lentils
  • 1/4 teaspoon asparagus powder
  • 5 head caraway
  • 400 ml water (for lentils)
  • 600 ml water (to soak salt and tamarind in water)

Cooking utensils

  • 1 gas stove
  • 2 liter cooker
  • 1 teaspoon
  • 1 tablespoon
  • 1 kadai pan

Step by Step Instructions

Step 1:  Soaking salt and tamarind

In a 1 liter jar add 1 gooseberry tamarind, 1 tablespoon salt (as required) and 600 ml water salt and soak for 10 minutes. Then squeeze the soaked tamarind and put it in a 1 liter container.

Step 2:  Boiling the lentils

Put 100 gram of lentils, 400 ml of water, 1/4 tbsp turmeric powder and 1 tbsp peanut oil in a 2 liter cooker. Wait until the cooker whistles 3 times.

Step 3:  Boiling the vegetables

Put the tamarind juice obtained in step 1 in the cooker. Add 2 tablespoons sambar powder. Chop 6 small onions / 1 large onion and 1 small tomato into small pieces and put in the cooker. Put 1/4 kg small brinjal in the cooker. Bring to a boil over medium heat on a gas stove for 5 minutes.

Step 4:  Sambar taming

Put 3 tablespoons of peanut oil in 1 kadai pan. Fry in gas stove in sim for 1 minute along with 1 teaspoon mustard, 1 teaspoon round lentils, 1/4 teaspoon asparagus powder and 5 heads caraway in oil. Put this in the cooker. After mixing the ingredients with that in the cooker, pour into a 1 liter pot.
